Ben’s mum’s Lemon Drizzle Cake

Do you ever wonder where we get the recipes for some of our favourite treats from? Well, Ben didn’t have to go too far for our Lemon Drizzle Cake – he just asked his Mum!

And while it has been a family secret for years, we reckon cake is made for sharing, so here’s the list of ingredients and how to bake it – enjoy!

Ben’s mum’s Lemon Drizzle Cake

This recipe makes one loaf cake of about 12-14 slices.

  • Ingredients
  • For the base:
  • 250g Unsalted Butter
  • 250g Caster sugar
  • 4 Eggs
  • 250g plain flour
  • 10g baking powder
  • 30g Lemon
  • 20g Lemon zest

For the syrup:

  • Juice of 1 lemon
  • 50g Caster sugar

For the icing:

  • Juice of ½ a lemon
  • 75g icing sugar

Heat oven to 180C or 160C fan, gas mark 4

  • Cream together sugar, baking powder, zest & butter until light and fluffy
  • Slowly add the eggs to ensure a smooth mix
  • Once all the eggs are combined, fold in the flour then the lemon juice
  • Mix thoroughly
  • Pour into a baking tin and place in the centre of the oven for 40-50 mins until a skewer inserted into the centre of the cake comes out clean
  • Once cooked, prick the cake with a cake all over& pour over the syrup
  • Finally cover with the icing & cool. And then serve to family and friends!
