Spiced Muffin Recipe (makes 12)

Want to make those cute little Santa muffins from Science Museum? Well here's how!
Ingredients: 110g margarine, 110g caster sugar, 2 medium free range eggs ( lightly beaten), 110g self raising flour, good pinch of ground cinnamon ( depending on taste ), 120g mix of dried cranberries and sultanas soaked in tea, 150g grated butternut squash.
1: Heat the oven to 180c/gas 4.
2: Mix the margarine and sugar together until light and fluffy. It is best to use an electric whisk.
3: Slowly beat in the eggs into the mixture.
4: Slowly beat in the cinnamon.
5: Gently mix the soaked fruits and the grated butternut squash.
6: Prepare a cupcake tray with 12 muffin cases. Bake in the oven for 20mins or until risen and firm to touch.
7: Allow to cool before decorating.
Icing ingredients: 200g icing sugar, 30g margarine.
Mix the icing sugar and margarine together making sure there are no lumps. The mixture should be thick.
Allow the mixture to chill a little before putting it into the piping bag.
